How to process blue silk

How is crimson silk processed? "Blue silk" is actually a sweet delicacy made from the peel of sweet oranges. It has a dry texture and a sandy surface, making it a type of dried candied fruit. The process begins with the preparation of raw materials. Fresh orange peels are first cut into thin strips, approximately 2 to 3 mm in width. These strips are then soaked in water and heated repeatedly, with the water being changed several times until all the bitterness is removed. Once the peels are free of bitterness, they are drained and ready for the next step. Next comes the sugar cooking stage. A mixture of 50 kg of raw sugar and 40 kg of white sugar is prepared by dissolving a small amount of the white sugar in water to create a thick syrup. The prepared orange peels are then mixed into this syrup and heated gently. Initially, high heat is used to evaporate the moisture quickly, while the sugar gradually penetrates the peels. As the mixture simmers, the peels become translucent. At this point, a coloring step is introduced. Since the natural color of the orange peel is white, it can be dyed red or green. For a red color, food-grade red dye is used, while green is achieved using copper sodium chlorophyll. The dye is dissolved in a small amount of water and then mixed into the sugar syrup. When the syrup starts to recrystallize, the temperature must be carefully controlled to prevent caramelization, which could result in an unappealing dark brown color. Once the syrup has fully crystallized, the sugar crystals should be fine and evenly distributed. After that, the product is moved to a drying room and dried at 60°C until the moisture content reaches between 16% and 18%. This ensures the final product is crisp and long-lasting. Finally, the finished product is packaged. It comes in red, green, or orange colors, and is purely sweet, with a sugar content ranging from 70% to 75%. It retains the aroma of orange peel and is commonly used as a filling for buns or cakes. However, due to its high sugar content, it is not recommended to eat it directly in large quantities.
