Preservation of eggs

First, raw materials

Polyvinyl alcohol can form a colorless and transparent film, which is attached to the surface of fresh eggs to protect it. Sodium acetate is an ideal food rot.

Second, the concentration of preservation solution is 5%-7%. After pouring 10 kg of water into the pot and boiling, add 500 g of polyvinyl alcohol, continue heating and stirring until the polyvinyl alcohol is completely dissolved, stop the fire, add 100 g of sodium acetate, stir to dissolve, and add boiling water to make the total solution. Weight not less than 10.5 kilograms, standby after cooling. Each kilogram of fresh solution can handle 60-70 kilograms of fresh eggs.

Third, keep fresh

The coating method depends on the number of eggs. When there is a large amount of fresh liquid, one can dip it one by one, and large quantities of eggs can be soaked one at a time. Each egg surface must be completely covered with a solution. After the eggs are dried, the surface can be formed. Layer colorless transparent film. During the storage, pay attention to indoor ventilation, regular sampling inspection, to prevent the local egg temperature rise, affecting the preservation effect.
