Jiang Yan's harvesting and processing technology

After 3 to 5 months of cultivation, the river algae grows to about 1 meter, and it can be harvested. The harvest season in different regions of China is different. Guangdong generally began to harvest in March, and no later than mid-May. Fujian is to be postponed for one month, that is from June to early July, while the northern region will not start harvest until July.

The current harvest of Jiangyan is mainly based on manual operations. After the dry tide, pick directly from the rock or the attachment by hand. The glutinous rice cultivar, Jiangyan, can be untied directly from the pedestal and then picked from the rope to dry, or hung together with a seedling rope and dried on a bamboo rack.

After Jiang Yan picks up, he must immediately carry out processing. Fresh fresh ginseng is rinsed with fresh water, shells and algae are removed, exposed for 1 day, then washed and then dried. If it is repeated 2-3 times, it will become a hard dry product with white keratin. In the Haifeng area of Guangdong, the first time it is not rinsed with fresh water, but dried directly. After being collected for one month, it can be bleached 1-2 times with fresh water. Usually 100 kg of fresh algae, can dry 12-15 kg of dry goods. The general fresh-dry ratio is 10:1. According to the analysis, the amount of glue contained in the dry goods of Jiangyan reached 25%-30%.

The processing flow is as follows: scopolamine treatment, concentration 36-38, soaking for 1-2 days, or heating to about 70°C, soaking for 15 hours, washing with water, flushing with fresh water with a pH of 7; bleaching, using sodium hypochlorite or Sodium sulfite, washed with water, well water that does not contain chloride ions is required; boiled, add 20-30 times of water to boil for 5 hours; filter, press into a canvas bag, and the filtrate is solidified; press dry with a pressure dryer, and then Crush, finished bagging storage.

Ginger and agar are important raw materials for extracting agar. Due to its unique properties of forming a transparent semi-solid gel, it has been widely used in food, medicine, biochemistry and scientific research for many years.

At present, throughout China's coastal regions, especially in Guangdong, Jiangya has been used as a raw material for making agar and Jianguo cake, which has been well received by consumers.
